Would candids go under street and photojournalism?

They might, but some might be better put under some other category. Event and performance, Kids & family, Portraits, Sports & action, and Weddings are other reasonable possibilities, depending on what the subject is doing and what the environment was like at the time and place the image was taken. If taken with special techniques or equipment, you might even make a case for putting a candid photo in the infrared, Black & White, or HDR category. There is sometimes more than one right answer.
