I think it would be more accurate to describe the positions as:

1=45 degrees away from camera (either direction)
2=straight on at camera
3=20 degrees away from camera in opposite direction of 1.

I take it that I am also correct in my understanding that the various positions refer to any of the three parts of the body, although I suppose some really strange (if not physically possible outside a Chinese acrobatic troupe) poses could be put together?

Not exactly. The first number always refers to the position of the body, the second the face and the third the eyes. So a 1-1-1 would mean the body, face and eyes all point in the same direction, a 45° angle in relation to the camera. A 1-2-2 would mean the body is at a 45° angle to the camera and the face and eyes are pointed toward the camera. A 1-3-2 means the body is at a 45° angle in relation to the position of the camera, the face is about 20° past facing the camera and the eyes are looking at the camera like in the images below. I think they all look quite nice!
