Never tried it myself but might be achievable in PS

I think you're going to have a hard time getting that diamond to sparkle because it's not in focus.

One trick that might help would be to work in brighter light. That will let you shoot with a smaller aperature wich will give you more depth of field. Another idea would be to let a narrow beam of sunlight shine on the diamond.
