After 24 hours the brisket and pork butt are off of the grill and resting in foil in a towel lined cooler. This will keep the meat hot for hours and ready for lunch.

Today's menu:

Beef Brisket
Pulled Pork
Macaroni & Cheese Salad (daughter-in-laws favorite)
Corn on the Cob (roasted in the smoker)
Baked Beans (heated in the smoker)
Zucchini Cake (No not baked in the smoker)
Home made Blackberry Gelato

I like pecan wood for salmon. Provides a unique smoke flavor. Didn't do ribs this year. Would be fun to see how the 18 month old grand daughter handled baby back's. She would probably end up a smeary mess.

I don't think I can make it 3000 miles by noon but thanks for the invite. I make the most of everyday anyway, I will probably go to safeway and get some buffalo to grill for me and my dog. Yeah, buffalo party!

Now you are making me hungry. I smoked a buffalo brisket once. I will say two things about buffalo brisket. It is DAMN GOOD and it is DAMN EXPENSIVE.

Ok, the table is cleared, the left overs, are put away, the kitchen is cleaned and almost everyone is in an over indulgence of food coma right now catching some ZZZ's before we head off for the fireworks show tonight.

The only complaint heard was about being too full at the end of dinner. Guess the brisket and pork butt was a hit. I have one whole brisket that is cooling and will be divided in half and frozen for later eating. Brisket is very popular with Christmas dinner. Go figure.

Hope everyone is having a safe and enjoyable 4th. Guess I will go take a nap now.

Just sold the rest of my Canon gear. Guess I'm out unless you count this little Olympus E-PL1 on my desk.

It was interesting while it lasted but not toward the end.
