Could someone please explain what OM lenses are vs. non-OM lenses? There are lots of different OM lenses on Ebay, and I don't want to buy anything because I don't know if they'll work with my E-510.

OM lenses are those that would fit the Olympus OM SLR 35mm film cameras, OM-1, OM-2, etc....They can work with E-510, and other Olympus dslr's, but you would need an adaptor and you would loose auto focusing. Non OM lenses would be ones that, presumably, did not fit the OM 35mm camera system. If a lens is stated as OM compatible, that does not mean it is fully compatible with the digital Olympus digital slr's. Hope that helps. -Ken

Look for lenses that say "digital" somewhere on them. It is most likely to be on the ring around the front of the lens or on a badge on the barrel. Feel free to ask about any specific one that you see to get an opinion here. You can also have a look at the entire 4/3 lens lineup, which includes all Olympus, Sigma, and Panasonic lenses that are fully compatible with your E-510:
