Usually Matrix as it figures out most lighting correctly. Most of my shots are Flash so I leave it on that mode. If there is a lot of back light then spot works best.

For Studio Strobes Light Meter is the only way, and set to Manual as per meter.

Canon refers to it as Evaluative, not matrix.

That's not really a metering mode.

I change it based on the shot and where I want my exposure.

I stand corrected also I never really understood what "Evaluative" mode was, My Last Canon was an FTb it was like so long ago I don't even recall what metering it had.
