Are you using SB800s? If so, I'd put one on the camera and use it as a commander, the other off camera and that way you can use high speed sync and make your subject pop more....that's assuming you're like me and like to stay around f/2.8 or so for shots like that. If you don't care about upping your f stop, then you can put both off camera and just make sure you take down the ambient level a little and power up the strobes a bit, then work with their placement after you've done that until you get something that looks interesting and visually appealing......
