Default On Camera Flash Setup

Some friends have hired a professional wedding photographer to do the formal photos at their daughter's wedding, but have asked me to do some candid shots during the reception, etc. Most of the photography I do is horses, horse shows, outdoors, with 70-200 VR or other telephoto lens and no flash. I have a Nikon D300, Nikon SB600, and a Nikon 18-200 VR lens. I also have a Sigma 18-50 F2.8. I don't have a flash bracket, but might consider getting one if it would help. I don't want to buy something too expensive which I may never use again. I won't be using off camera flash or reflectors. Since I'm not much into flash photography, my question is, what would you recommend as far as camera/flash settings and setup?
