I forgot to include the bit JohnC mentioned about opening up a stop. It works, and the highlights should look reasonable unless they're way out of your sensor or film's dynamic range. If you're worried you can be conservative and only open up 2/3, or even 1/3 stop, but you'll be lightening the image in post.
