The truth works best. Most photographers who use assistants will already have one. Keep trying every few months. You may want to join a local proffessional photography organization with affiliation to PPA. Then you will meet the local professionals. You don't have to be a full time professional to join and you will learn ALOT. Once in, you can network yourself into an assistant position.
